Dibbs Tripel
I brewed this at the end of January and have patiently waited for this to age in secondary in the low 50’s for the last month or more. I am bottling it this week (3/8) and refermenting in the bottle, which means another 3 weeks prior to tasting. It will be my first use of Belgian corks and cages for most of the batch into 22 oz bottles with a few into 12 oz bottles for competitions and friends.
3/12/16- Update: I bottled this today and it was a great reminder of what a pain in the ass bottling beer is. I ended up with 15 Belgian style corked bottles and 15 smaller bottles 12 oz or 375 ml for competitions. The beer tasted great out of the fermenter with a nice light Belgian yeast aroma, some sweetness, decent body and a straw color.
3/20/2016 – Opened a 12 oz bottle after a week and it was well carbonated with fine bubbles, fairly clear, some light Belgian yeast aroma, pilsner malt sweetness. Medium body with a creamy silky texture, no warming or alcohol bite. Tastes some sweetness which is surprising given it is 9.0+ %. Light to no hop bitterness with a drying finish. Sneaky big beer. Very drinkable.
