Belgian Wit
This beer recipe was designed and brewed by my friend Ryan and it won the Belgian Wit category for the CASK Comp de L’abbaye Normale competition last fall. The prize for winning was the privilege to brewed this beer at Zeta Brewing Company in Jacksonville Beach on a commercial brewing system. It is a nice light Wit that is easy drinking especially in the summer heat with a light straw color body, a little cloudy from the wheat and some citrus notes from the coriander and bitter orange peel. Brewed with Tettnnang and Saaz hops to add some light bitterness. Served with plenty of carbonation your sure to enjoy this beer.
Brewing Notes: This was the first time that I did a stepped mash using a protein rest at 122° F for 20 minutes due to the 4.5 lbs of wheat. I’m not sure it helped much as my starting gravity was a little low and efficiency suffered. I used rice hulls in this mash, but still has a stuck mash and sparge, that was to be expected with using wheat.The WLP 400 yeast really went to town fast and attenuated well, but didn’t flocculate well even after crash cooling for several days.
